I just wanted to share some cakes I made over the Christmas holiday to take to a couple of family gatherings.
This is the cake version of our Mocha cupcake. Chocolate cake with caramel and chocolate syrup between the layers. It's then covered in Mocha buttercream frosting and topped with more caramel and chocolate syrup and chocolate covered coffee beans.
This is a chocolate/chocolate/chocolate cake. It's chocolate cake with chocolate buttercream frosting and then topped with dark chocolate ganache. Yummmmm!!

Liz and I were chatting this weekend and were trying to think of clever and funny things we could write about on the blog, but both of us were drawing a blank.
After several "entertaining" things happened on Saturday while working, we keep saying that we should add that to the list of things we've learned while working in the bakery.
So here we go......
1. When you are working with chocolate frosting, and there is a hole in your bag (even if you tape the hole closed), if the frosting gets cold, and you squeeze the bag, it will shoot out the side under the tape and all over the baking rack.
2. When you are coloring fondant, you should always wear plastic gloves because the coloring can stain your hands. Especially if your hands are dry from the cold and hot water from washing dishes all the time. (See picture below as evidence).
Right in the middle of the above picture is a new flavor - Chocolate Peppermint. It's a chocolate cake with peppermint buttercream frosting and then topped with crushed peppermint candy and a Peppermint Junior Mint Candy.
Not So Red Velvet and Vanilla/Vanilla
Here's a new flavor - Candy Cane! It's vanilla cake with peppermint buttercream frosting and candy cane sprinkles.
Here's another new flavor - Pecan Pie! It's a pecan cake that's very, very moist and it's topped with just a bit of vanilla buttercream frosting and a glazed pecan. Yum!
Don't forget that the cupcake counter/bakery will be open at 4am on Black Friday!

Liz and I have decided to take a few days off due to the holiday. Although we are offering breakfast items on Friday, there will not be cupcakes on Friday 11/27. The cupcake counter will be closed Saturday, 11/28-Monday, 11/30. We will be back on Tuesday, December 1st with cupcakes!
Here's the big, big cake we've been working on since Saturday.
The birthday girl requested a green guitar and some hot pink frosting. Her mom said to make it wild and that it needed to feed at least 50 people - maybe more. So we put on our thinking caps and this is what we came up with.
The base cake was about 12x28. Yes, that's right, nearly 2 1/2 feet of cake! Then we carved the guitar out of another half sheet cake.
All cake is chocolate and vanilla marbled. The base cake is covered in pink tinted vanilla buttercream. The guitar is iced in vanilla buttercream and then covered in marshmallow fondant.
Everything about the cake is edible except for a few support pieces.
Last report we had after delivery was "It's awesome!"
I hope I caught your attention with my title. Here's a little story about a cake.....
I was contacted earlier in the week asking if my sister and I would be interested in donating a baked good to our local elementary school for their Fall Carnival. Since we both have kids at Greenbrier Elementary, of course I said we'd be happy to donate a cake for the "cake walk".
Not only was it for a good cause, it would also help us get our name out there as someone to go to for cakes as well as cupcakes.
As I was thinking about what to make, for some reason this little ghost cake keep coming into my head. Since it's so close to Halloween and all, I thought this would be great for the cake walk.
Now, we could have done easy and simple, but nooooooo, the one I had in mind was more complicated.
He's four layers tall, he's covered in homemade marshmallow fondant, he's cute and edible. What more could you ask for?
So without further delay - I present "Casper"
He stands about 9-10 inches tall and I guess he weighs about 8-10 lbs.
After I delivered him this morning I was told that he probably wouldn't make it to the cake walk after all, but would become part of the auction! We were thrilled with that news!
